THE TRULY AUTHENTIC SANTORINI FAVA
With respect to the product, we try to marry the traditional dry farming of the old farmers, with modern methods. Since ancient times, the fava species Lathyrus Clymenum L. has been cultivated continuously for 3500 years in the stony volcanic soil of Santorini, trapping the spring waters that, with the help of the western winds, rise and "jump" over the wall of our (30) plants that they are so needed in an almost desolate landscape. We supervise one step of the entire process from sowing to its collection and then to its processing and standardization, thus ensuring the best raw material with unique organoleptic characteristics.
Foamy texture (high in carbohydrates),
Ease of cooking it boils in 1/3 of the time it takes for other types of fava beans.
Subsweet taste which is due to the presence of increased sugars.
THE FARM OF NOMIKOS
The "Yannis Nomikos Farm" is in a continuous effort to standardize the agricultural products of the island (fava beans, tomatoes, shelled peanuts, figs, prickly pears, capers, etc). A limiting factor is the limited quantities of the products.
They cultivate their own estates but also collaborate with selected local farmers.
THE THERAIC LAND
Santorini is a small arid volcanic island in the middle of the Aegean Sea, such a microclimate and soil, it was never a farmer's paradise.
Only certain species of certain plants have managed to acclimatize and become productive. Plants nourished by the volcanic soil, the sea breeze and the Aegean sun.
